How to Record Console Gameplay?

I'm doing a full playthrough on a fe games and wanted to upload the gameplay videos to Youtube, and a few forums. How would I go about recording a game on my PS2/PS3/Wii onto my PC? I vaguely remember seeing an add-on on GameStop.com somewhere that did this, but I can't find it now. I want these videos to be as high quality as possible, so I won't just be pointing my camera at the TV.

You want to look for a device called a "Capture Card".
